1 lb eating-quality plain (semi-sweet) chocolate *
1 large tin sweetened condensed milk
2 tsp vanilla
Line a pan with foil or cling film, approximately 7″x 10″ or thereabouts.
Break up the chocolate into a large casserole dish and put in the microwave. Melt 2 min on high, remove to stir, 1 further min on high if needed. (If using high cocoa chocolate, being drier it may burn, so better off melting over hot water)
Add the sweetened condensed milk and vanilla, and stir until well blended. Spread in tin and smooth level, refrigerate until set, and cut into squares. Store in the fridge or freezer.
* Don’t use cheap cooking chocolate. Most UK supermarkets have a good own-brand dark chocolate of around 50% cocoa for eating, often in 400g bars. Try topping up with 50g of a very dark chocolate (60-80% cocoa) to make up to the full amount, for an extra rich version.
